
Today being one of the first genuine fall/winter days around here, I was wanting soup, but I didn't want condensed soup. So, repairing to my larder, I looked at the canned veggies I've been stockpiling there and decided to use some of them up. I've seen my mom make up soups so how hard can it be? Pretty darn easy, in fact.
Start with some spices: onion powder, garlic powder, chili powder, a little basil, salt and pepper in the bottom of a big pot. Pour a thin layer of lemon juice on it and swirl to wet spices. Turn heat to "High". When lemon juice starts to bubble add one can onion-flavored beef broth. Stir. Add one can diced tomatoes. Stir. Add one can butter beans. Stir. Add one can green beans. Stir. Add several handfuls rice. Stir. Taste. Add more onion powder, garlic powder, and chili powder. Add one can sweet corn. Stir. Let bubble for a few minutes while reciting: "Double, double, toil and trouble. Fire brew and cauldron bubble." Taste. Add one single serving size can of V8 or veggie juice. Stir. Taste. Turn heat down to Medium High and let bubble a few more minutes. Turn off heat but leave pot on burner until it stops bubbling. Serve warm from the stove. Slice mozzerella cheese and melt into soup.
Yum! Plus I get lots and lots of leftovers. Reheated, it's not bad either.
